Which One, Red or Green Chile Sauce?

Our 3 hour guided tour of the downtown Santa Fe Plaza area with Victor got us a glimpse of its historic storied past, undoubtedly a vibrant town with myriad of galleries from end to end, stopping by several neighborhoods including visits to San Miguel Catholic Church, the oldest Church structure in the US (1610), and the miraculous Loretto chapel staircase.
And the food? It’s primarily traditional Mexican dishes recreated with New Mexican spices: lots of red and green chile peppers sauce, posole, and slow-cooked beans. We had lunch at The Shed recommended by our guide… I had the Poblano Relleno Plate, roasted poblanos stuffed with Muenster cheese on tomato sauce and sautéed onions with pinto beans and Spanish rice; Ernie had the Carne Adovada Plate, lean pork slow-roasted in a marinade of Shed red chile, garlic & oregano, with blue corn enchilada with cheddar cheese & onion, covered with red chile, with pinto beans & posole. So delicious! We couldn’t resist their French apple pie topped with ice cream end whipped cream. (We waked 4 miles to offset the extra carbs😜).
